Crispy Fried Plantain With Saltfish Toppings.


Ingredients:

1. Full green plantain
1. pk. boneless salt fish
1. Red bell pepper ( use half)
1. Yellow bell pepper ( use half)
1. Green bell pepper ( use half)
1. Orange bell pepper (use half)
1. Cup coconut milk
1/2 tbsp salt
3. Stark spring onions
 Oil.

Salt Fish Preparation:

Soak salt fish from over night and then boil it for about 7-8 minutes, then wash it with cold water and then break up the salt fish into small pieces in a bowl set it to the side. Heat up about 2 tbsp oil in the pot then add onions, bell peppers, spring onions, mince thyme or black pepper stir those in the pot then add salt fish and 1 cup of coconut milk stir and taste for flavor then cover pot and turn fire down and cook it for 1-2 mins.


Plantain Preparation:

Peel plantain and slice it into 3-4 pieces place them in a bowl then add 1/2 tbsp salt rub the salt all over the plantains then add sufficient oil into frying pot once oil is heated up then start frying plantains for  about 2 min on both sides then removed them from pot place them into a bowl. Use a clean kitchen towel or a zip lock bag to press the plantains after finish pressing them add them back into the hot oil and fry them again for 1-1.1/2 min on both sides or until golden brown all over.
