Ingredients:
3 Cups flour
1/3 Cup sugar
2 Tbsp baking powder
1 1/2 Tbsp butter
1 Tbsp instant yeast
1 Tsp salt
Oil (for frying)
11/2-2 Cups Luke warm water
METHOD:
In a large mixing bowl, add flour, baking powder,sugar,salt, yeast. Using your hands to mix to make sure all ingredient are evenly combined. Add butter then use your finger tips to rub the butter into the flour and mix well then slowly add water a little at a time while mixing with your hand ensuring flour absorbs the water. The dough will start to pull together and be grainy in texture. At this point lightly dust your counter top with flour and place your dough on it and start kneading for 3-4 minutes until a dough ball is formed. Dough should be placed back into the bowl using a damp paper towel or tea towel to cover it for 5-7 minutes for it to rest. Flour counter top loosely and portion dough into small balls the size of a golf ball then roll in the palm of your hands to form a nice smooth finish. Cover them again with tea towel/ paper towel and let them rest for another 5 minutes. Pour oil into frying pan over medium heat, then take the dough ball and flatten them gently with a rolling pin to the desired circular size. Place bakes into the hot oil one at a time then use a spoon to base the top of the bakes by pouring hot oil over then flip the bakes over immediately after, this will certainly assist the bakes in rising and swelling. Remove from heat and place them on a paper towel to absorb additional oil.
NOTE: cut bakes open and enjoy it with cheese, butter, or salt fish, corn beef, curry chicken etc.
