Pepper Shrimp



Ingredients: 1 Pk shrimp
Green season
Annatto oil
Old bay season
Red pepper
Lemon pepper
Garlic powder
Ginger
Paprika
Red pepper flakes
Scotch bonnet pepper
Spring onion
Thyme
Salt
Red food coloring
All purpose season
Onion


Methods:

Clean shrimp properly then place them into a bowl for seasoning add 1 tsp salt, 1 tbsp annatto oil, 2 scotch bonnet pepper
1 tbsp red pepper, 1 tbsp lemon pepper, 1 tbsp red pepper flakes, 1 tbsp green season, 1 tbsp old bay season, 1/2 tbsp ginger, 1/2 tbsp garlic, 1/2 tbsp all-purpose season, and thyme. After shrimp is seasoned put it aside to marinate for 20 minutes, then add 2 tbsp of annatto oil to the pot once the oil is heated up add shrimp to the pot and stir then cover the pot for 3 minutes letting the shrimp cook then add 2 more tbsp of annatto oil to the pot then cover for about 1-2 minutes.
Then add a little bit of red food coloring into 1/2 cup of water and add it to the shrimp cover pot and turn down the fire on low letting it simmer for about 4-5 minutes then turn store off and let the shrimp sit in the pot for 15 minutes without heat this way the shrimp will soak up all the color and flavors.



Note: Annatto oil helps with color and flavoring I highly recommend it and that red food color tops it off, u can use the gel food coloring or the dry one.
