Coconut Curried Corn



Ingredients:

4-5 Corns
1/2 Onion (chop)
1/2 Red sweet pepper
1/2 Green sweet pepper
1/2 yellow sweet pepper
1 Tbsp curry powder
2-3 Spring onion (chop)  
1  Tsp salt
1 Tsp Tumeric
1/2 Tsp ginger (mince)
1 cup pumpkin (chop)
1 Scotch bonnet pepper
1 Tbsp season (All purpose)
Thyme
Oil
coconut milk


Preparation:

Chop corn's in 4-5 pieces then wash them and place them into a bowl for seasoning, now go ahead and add 1 tsp turmeric, 1 tsp all-purpose season, 1 tsp salt, 1/2 tsp ginger and mix it all over the corn's and set it to the side for about  1-2 mins.

Wash sweet pepper's, onion, pumpkin, spring onion and dice them up into small pieces.
In your pot add about 1 tbsp oil, 1 tbsp curry let the curry burn for about 1-2 minutes then add the sweet peppers, onion, spring onions and stir it then add the corn's and stir it together then add the pumpkin give it a little stir and cover the pot for 2 minutes.

Now add 11/2 cup of coconut milk,1/2 pk cock soup noodle, 1 tsp butter, a few pimento seeds, 1 scotch bonnet pepper, thyme stir together, and let it cook for about 15-20 minutes or until corn is cooked.


Note: with this lovely coconut curry corn you can enjoy it with white rice, boiled banana, boil dumplings, or u can have it just so. Enjoy and thanks for stopping by.
